Event description

Description

This course takes place over an entire month, meeting once a week. The first day is an intensive day-long course covering some of the basics of high-end chocolate as well as the history, economics and wonderful chemistry of chocolate. The following three weeks are three hour sessions and will show you how to work with dark, milk and white chocolates. We will discuss working from fresh ingredients, using molds and using colored cocoa butters. This course is offered once or twice a year and details can be found on our Eventbrite page as to the next course and the cost.

The dates and times for this course are the following:

  • 9/2/19 10am-6pm with lunch provided
  • 9/9/19 5:30pm-8:30pm
  • 9/16/19 5:30pm-8:30pm
  • 9/23/19 5:30pm-8:30pm

Requirements for the course are the following:

  • an apron or chef's jacket
  • basic understanding of food safety
  • basic understanding of chocolate and tempering (though mastery is not required, it is recommended to take the day-long intensive course before this one)
  • an ability to commit to the hours outlined

This class will be personalized to the desires and needs of the small class of students. A minimum of two students is required and we cap the students at six to keep this course intimate and quick moving.
