Event Details

        Join cooking instructor and Chef/Owner Terry Paetzold of In Terry's Kitchen and guest chef Ruth Alegria of Mexico City for a hands-on Mexican cooking class featuring a fiesta menu suitable for hosting  your own Cinco de Mayo party. Ruth Alegria, founder of the Princeton Cooking School and former owner of Mexican Village Restaurants, now resides in Mexico City where she organizes cultural culinary tours for chefs, writers and media personalities. She hosts cooking classes at her school, Mexico Soul and Essence, which was named by Saveur Magazine (Sept 2012) as one of five destination culinary schools to attend in Mexico City. She is a classically trained chef and has studied and worked with many outstanding and celebrated chefs in the culinary world including the ‘grand dame’ of Mexican cooking, Diana Kennedy.

       Our extensive afternoon cooking class will offer students the opportuinity to experience a variety of  cooking techniques used to prepare traditional delicious Mexican dishes-- using a wood oven as well as a comal for roasting, a molcajete for grinding; introduce the how to's of using fresh masa dough, as well as where to find good Mexican seasonings and ingredients from dependable local sources.

           Ensalada Chapultepec--Jicama, Cucumber, and Orange Salad with Lime, Chili and Salt 

              Sopecitos de Guadalajara-Small rounds of toasted masa with beans, cheese and salsa

                       Fresh Guacamole and Homemade Salsas with Freshly Roasted Chilis

                                                   (using the traditional "molcajete")

                     Wood Oven Roasted Prawns Seasoned with Chipotle Chile-Chipotle Aioli 

                                            Slow Roasted  Roast Pork in Banana Leaves 

                                            Tomatillo Chicken Tacos with Fresh Cheese

                                         Cazuela de Frijoles (Mexican Beans with Bacon)  

                                                                   Mango-Lime Ice


 TEQUILA PAIRING:  Grover and Scarlet Sanschagrin bloggers of Taste Tequila and founders of tastetequila.com will round out the class with a special tequila pairing to compliment the dishes of the day . They are the "go to" experts  on how Mexican tequila is made and evaluated and the creators of the Tequila Matchmaker app, a mobile device for tequila lovers!

Terry Paetzold is owner and chef-instructor of In Terry’s Kitchen,* a home-based cooking school in Lafayette, California  located in the lovely hills of thel San Francisco East Bay. In Terry's Kitchen offers both demonstration and hands on cooking courses based on local and seasonal ingredients, influenced by those destinations where Terry has lived, traveled and worked including France, Italy, Mexico, Morocco and the Caribbean.

   Terry is a graduate of the California Culinary Academy, holds a degree in pastry and baking, and also spent extensive periods of time working and cooking in France as a private chef.  She was opening pastry chef for Postino Restaurant under the direction of Chefs Michael Chiarello and Cat Cora of Food Network Fame. She has worked as a recipe tester and developer to cookbook authors including Iron Chef Cat Cora.

  She has been a member of the San Francisco Professional Food Society as well as The International Association of Culinary Professionals since 1996.
