A Glean Taste—Eat & Drink To Reduce Food Waste
For A Glean Taste six chefs each cook a dish prepared from edible but potential food waste.
What We Glean
- End-of-market products but also (misshapen) eggs, day-old breads and goat whey (leftover from cheese making) from market vendors, including Blue Heron Farm, Renaissance Chicken and Artisana Breads
- Direct-picked “ugly” fruits and vegetables from local farms, including Plant It Forward and Finca Tres Robles
- Whole Foods Market: they let us glean from food items that end up in WFM’s “zero food waste” programs (donations or reuse), including perishables like meat and seafood.
- Wild harvest: wild pecans, hoja santa and other edible greens and herbs, prickly pear jelly and… master beekeeper Shelley Rice will glean raw honey and honey comb
Chandler Rothbard, Soren Pedersen, Pat Greer, Gina Lopez, Ara Malekian and Jill Bartholome are transforming these gleaned ingredients into delectable dishes.
What Is There To Drink:
Yaupon Tea, Kombucha, Chicha Morada, selected wines and Sangria by sommelier Rachel DelRocco.
What To Expect:
