Diabetic Cooking Tip of the Day; Marinade your Meat:
Marinades typically consist of an acidic ingredient like vinegar, lemon juice, wine or yogurt, plus oil and spices. The acidic ingredient softens the food, allowing it to absorb the flavors of the sauce. Marinading works on all kinds of meat, as well as fish, tofu and vegetables.
Start marinading your meat with Ginger root, yes, thats right; Ginger Root, over night; even, and if you're going to use vinegar, use brown vinegar (Brown Vinegar is hard to find now-a-days! So you may have to perform an in-depth search online, and if you're still not having any luck, you will have to use your mafia connections at your local neighborhood Italian Market. This is to insure that you use and get brown vinegar.). You can add all the other lemon juice or yogurt later, but lots of Ginger Root, first, and what ever makes you happiest afterwards.
