Event Details

Join the dynamic duo of Andrew Ely, our 21 Acres’ farm specialist, and Yuka Honda, one of our culinary experts, in this delicious exploration of fall mushrooms. Andrew will share his vast knowledge about sustainable and ethical mushroom foraging. Yuka will assist you in exploring the nutty aromas and meaty texture of mushrooms in the hands-on cooking portion of the class. Their tips and tricks will leave you feeling more confident on how to forage for your own mushrooms and how to deliciously prepare them! Weather permitting, we will use our wood-fired oven out on the farm to cook mushroom and goat cheese pizza, sautéed mushrooms with bacon, savory farro (a local whole grain) with porcini mushrooms and kale, and Asian marinated fall salad. Vegetarian with wheat, optional meat and dairy.

Instructors: Andrew Ely, 21 Acres’ farm specialist, and Yuka Honda, Cook Veggies at Home

Andrew brings biodiversity to the forefront at the 21 Acres Farm. With soil as the foundation of our food, Andrew strives to restore and regenerate the 21 Acres Farm by stewarding our ecosystem to increase diversity and reduce overall inputs. He is excited to start his first season managing a farm with the goal of creating a healthy, peaceful, and fun place for visitors to practice mindfulness, engage with their foodshed, and learn from the landscape.

Yuka has been sharing healthy living life style in her Japanese community for many years. She learned importance of food and environments to sustain one's health after her experience with the Chernobyl nuclear accident. Now she teaches simple easy tasty vegetable home cooking. She shares simple recipes, teach easy cooking technique and tells traditional wisdom with 21st century scientific knowledge.

Registration is required in advance for culinary programs. All proceeds benefit educational programming at 21 Acres and initiatives related to accelerating social change toward more sustainable ways of growing, eating and living that protect the environment while supporting a better quality of life.
