Share 21 Acres: Cultivating Cooks Design Your Own Dish — A Two-Part Creative Workshop

Event Details

Unleash your creativity in this class all about designing your own unique recipe. Participants will be provided with various seasonal ingredients and will learn the basics of flavor combinations. Start with a small idea or single ingredient and develop it into a full-blown dish! On day 1, we will learn about the process of creating a dish and experiment with flavor combinations. On day 2, participants will finalize a recipe from their selected ingredients and prepare it from scratch! All ingredients are locally sourced by the 21 Acres Center. This class is intended for kids and teens ages 12-17. Class prices include a meal. Accommodations for dietary restrictions upon request.

Difficulty Level: 2 forks out of 3; some previous cooking experience at home or in a 21 Acres cooking class recommended

Skills Taught in this Class Include:
Cooking Skills
     - One-on-one guidance in executing students recipe of choice
     - Chemistry of cooking: introduction to the concepts of salts, acids, fats, emulsifiers and more!
     - Access to a fully stocked professional kitchen
     - Tasting and adjusting
     - Keeping a clean, organized work environment
     - Time management
Creative Skills
     - Reflecting on our personal flavor preferences and practicing cooking for our palate
     - Experimenting with novel ingredients, techniques, and flavor combinations
     - Recipe development: how to develop a recipe concept, write it out, practice executing all steps, and editing for final draft

Instructors: Alice Carli & Erica Weisman of Seattle Cucina Cooking School

Co-founders of the Seattle Cucina Cooking School, Alice and Erica, teach in local schools, community centers and after-school programs in the greater Seattle Area. They lead creative, hands-on classes to improve students' nutrition, how they relate to their families and community, and how they participate in sustainable food systems. They joined 21 Acres' culinary program in 2018.

Alice received her public health degree from the University of Washington and is interested in the intersection of cooking, nutrition, and childhood development. She's been an avid cook for the past 10 years, especially for friends and family!

Until recently, Erica worked as a professional cook, most recently at the James Beard Award-nominated restaurant, Canlis. She also managed a food cooperative and loves cooking with fellow devotees to bring the greater Seattle community delicious, wholesome food.


Registration is required in advance for culinary programs. All proceeds benefit educational programming at 21 Acres and initiatives related to accelerating social change toward more sustainable ways of growing, eating and living that protect the environment while supporting a better quality of life.

The more the merrier! Our classes are twice as much fun when they’re full. 21 Acres reserves the right to cancel any class, camp, or event that fails to meet the minimum enrollment numbers required for instructor participation. 21 Acres may also cancel events due to chef/instructor illness or inclement weather.
