Event Details

The Pacific Northwest is known for its sustainable seafood. Shellfish definitely play a significant role in our regional seafood scene. Join culinary instructor and seafood enthusiast, Cat Olson, for a brief walk on the 21 Acres Farm to gather last minute ingredients to highlight our shellfish menu. Then make your way to the kitchen to celebrate the local, seasonal mussel harvest with a Belgian Bistro favorite: moules frites. This classic dish of mussels steamed in white wine is the perfect way to celebrate the start of the “R” months, said to be the best for shellfish. And nothing is better suited to soak up the silky broth than a batch of crisp and salty fries. For dessert, we’ll use the ripest fruits of the season in a creamy, custardy clafoutis. With shellfish and wheat, dairy optional.

Instructor: Cat Olson

Cat has the ability to make a spontaneous gathering of friends feel like a party planned for months. She cooks with whole foods – often plucked from her garden – and simple recipes that always impress. Cat's classes are fun and full of great ideas for feeding your family. She has been a caterer and private chef, and is now a cook-from-home mom to 2-year-old Oscar; easily her most discerning palate to date. Her greatest joy is realizing there are enough tidbits left over in the fridge to put together a meal.

Registration is required in advance for culinary programs. All proceeds benefit educational programming at 21 Acres and initiatives related to accelerating social change toward more sustainable ways of growing, eating and living that protect the environment while supporting a better quality of life.

The more the merrier! Our culinary classes are twice as much fun when they’re full. 21 Acres reserves the right to cancel any class that fails to meet the minimum enrollment numbers required for teacher participation. 21 Acres may also cancel classes due to chef illness or inclement weather.
