2019 Tulum TOM Festival featuring Chef Merlin Labron-Johnson and Chef Jose Neri at legendary Casa Malca.

Michelin Star Chef Merlin Labron-Johnson will be minimising wastage, using fruit and herb trimmings, animal fats, offal and bones reintegrated into his Mexican influenced menu.

Passionate about the future of food, Merlin Labron-Johnson is a young British chef on a mission. Supporting and championing a number of charitable and altruistic initiatives, Labron-Johnson works to create conversation around food and address key issues, both within his community and beyond. He is currently the UK’s youngest to hold a Michelin star.

Head chef of Portland when it launched in 2015, here Labron-Johnson gained a Michelin-star just 9 months after opening, at the age of 24. He went on to garner critical acclaim across the board for Portland and sister restaurant Clipstone (August 2016).

Cutting his teeth at two Michelin starred Albert 1er in Chamonix and cult one star restaurant In De Wulf in Belgium, Labron-Johnson honed his skills throughout Europe prior to moving to London. Led by seasonal produce and inspired by nature, Labron-Johnson’s cooking is clean yet informal and abundant; shunning trends in favour of compelling dishes. His food is imaginative yet refined, combining a consummate understanding of classic French techniques with modern sensibilities.

Chef José Castañeda Neri of Philosophy, flagship restaurant Casa Malca, is from the State of Guerrero.
After working more than 8 years in luxury hotels and large tourism companies of international stature she could complete their studies in Gastronomy and performed his internship in Oaxaca de Juarez and in different parts of Mexico.

During his career work alongside great chefs of Mexican cuisine, as Carlos Zamora, Luis Arellano, Jorge Ildefonso and Eugenio Villafaña where he could learn different techniques and styles.
Also I had the opportunity to participate in various international festivals culinary chefs being recognized on several occasions for his talent.
With solid foundation in Mexican cuisine, in September this year he joined the culinary team Casa Malca as Chef restaurant.

House pastry chef Malca, Simone Colla is from Italy and started in the kitchen at a young age . He decided to study the degree of Hotel and after six years working as a cook chance led him to the bakery when he was offered a job at a hotel in Italy during the summer season. At that time, during the winters, he worked in Saint Moritz, Switzerland.

He then continued his experience in countries like England, France and Spain where he could hone their techniques and meet international and author of several restaurants estrellados and large hotels like Ritz Carlton and Mandarin Oriental in Barcelona where he was Sous Chef and soon, Chef pastry Pastry.

After a long season in Barcelona, Chef Simone built a solid foundation in traditional pastry and through admirers of his work came the opportunity to disembark in Tulum and be an important part of the culinary team at Casa Malca where he combines his passions for the sweet, his family. In his pastry constantly explores local ingredients, acquiring knowledge and developing techniques that are certainly a pleasant surprise the palate.

This ticket is for the 2nd seating which will begin at 9pm. Please arrive at Casa Malca and be prepared to be seated at 9pm to ensure you are able to enjoy the full menu.

What are my transportation/parking options for getting to and from the event?

We recommend going to all beach events via taxi. During high season parking can be very difficult on the beach road, plus you want to enjoy all of the fabulous Mezcal, Beer and Tequila we will be highlighting! Also please allow plenty of travel time, beach road can be very congested during high season.
