Description

This workshop is a requirement for youth that wish to participate in the 4H Hog and Ham project for the first time or have not participated in the 2018 project.

After the 4Her has completed this workshop they will be eligible to apply for a spot in the project; which is limited to 30 participants.

To participate, a 4H member must be 12 years of age in September of 2018. There are 3 phases to this project which are (1) selecting and raising, (2) slaughtering and processing and (3) record book, pork audit, and presentation.

After acceptance for the 2019 program, the participant will select a feeder pig by May 1. Pigs will be harvested August 13 and processed either on August 14 or 15

April 27- UF Hog & Ham pig sale. August 13 - Project Books and Pork Retail & Foodservice Audits with copies of thank you letters are due to county 4-H office.

August 25 - All Project Books and Pork Audits due to Chad Carr, University of Florida.

September 14 - Demonstration Day at University of Florida; awards presentation. Pick up cured hams, bellies, and smoked sausage links.
