Amarillo Galaxy Saison, Belgian Saison
Brewed with pilsner, wheat, and rye malts with a healthy dose of aromatic American and Australian hops in the whirlpool and dry hop using a house yeast strain. This saison has a firm bitterness dry mouthfeel. While the pungent citrus aromas of the hops stand out on the nose, the fruitiness of the hops plays well with the tartness of the Belgian yeast and the rye accompanies the spiciness of the strain. IBU: 40, ABV: 7.8%
Crush! Kill! Destroy!, a New England Style IPA
CKD is my house IPA, although I am constantly tweaking the recipe. This iteration was brewed with almost 30% of the grist consisting of wheat and flaked oats and fermented with the same yeast as the vaunted Alchemist Heady Topper IPA from Vermont. Relatively low bittering with Columbus hops during the boil, large amounts of Citra, Mosaic and Simcoe hops were added at whirlpool with another large dose added for a 30 minute hopstand as the wort cooled. Towards the end of fermentation, this beer is double-dry hopped with more Citra, Mosaic and Simoce hops. This results in a very drinkable beer with a bready maltiness and huge amounts of juicy citrus and stone fruits. IBU: 80, ABV: ~ 7%
