Introduction to Stir-Frying: Techniques & Tips

This class introduces equipment, techniques, organization, and resources for enjoyable stir-frying. Several stir-fries will be prepared to show basic technique. Please stay to help with cleanup. \

Introduction to Stir-Frying: Vegetables & Tofu (DT)
Vegetables present challenges and opportunities to stir-frying newcomers: they should retain some crispness, acquire a smoky sear, and not become overcooked. We'll review how to assess and prep individual vegetables to maximize their tastiness and then apply the techniques to spring vegetables. Then we’ll tackle Tofu and prepare it in a wide variety of ways for stir-frying, including naked tofu, oven-baked tofu, and shallow-fried tofu. You'll go home eager to use the fresh spinach, bok choi, and asparagus of spring in your own stir-fries. Please stay to help with cleanup. Children ages 6+ are welcome if accompanied by an adult.

Introduction to Stir-Frying: Meat, Fish, & Seafood (DT)
Just in time for Father's Day—meat! Stir-frying presents challenges and opportunities to cooks wanting to incorporate meat, fish, and/or seafood into their dishes. This session will explore water and oil velveting, cutting techniques, and selecting meat, fish, and seafood for stir-frying potential. We'll prepare several stir-fries famous for their meatiness, and you'll go home with a simple, infallible recipe for preparing your own char siu (Chinese barbecued pork). Please stay to help with cleanup. Children ages 6+ are welcome if accompanied by an adult.

The Flying Wok: Stir-Frying around the World (DT)
The wok and stir-frying got their start in China, but they certainly didn't stay there. Stir-frying is as common in southeastern Asia and southern Asia as it is in the north. In this final session on stir-frying, we'll look at how Vietnamese, Thai, Indian, and Malaysian stir-fries differ from their northern cousins and stir-fry up a few to celebrate midsummer's bounty. Please stay to help with cleanup. Children over 6 are very welcome to register and participate if accompanied by an adult.
