Indian Cooking Class: Savory Upma, Fish Kofta Curry, and Begun Bhaja (Eggplant)

As you walk into the class, you’ll be greeted with hot chai.
We'll begin by preparing our appetizer, the Savory Upma. Upma is cream of wheat - we'll make this appetizer from scratch using fresh herbs and spices. This healthy and mouth-watering dish will be ready in no time! After eating the Savory Upma and replenishing our energy, we'll dive right into cooking the two main courses.
Our first main course of the night is a fish kofta curry - fish-balls (or also known as fish koftas) cooked in a onion based gravy that is simple and bold all at once. Even though this dish is healthy already and I focus on healthy food and cooking habits as is, I will show you two different methods of preparing fish koftas - one slightly healthier than the other :)
The next main course we'll prepare is begun bhaja, an eggplant dish that pairs really well with seafood; it goes really well with plain white rice as well. We'll enjoy these two terrific dishes with plain white rice.
You will learn to prepare all of the three dishes from scratch using fresh spices and other ingredients. Nothing preserved is allowed in my kitche.
