Perfect Pasta and Sauces

Throwing your pasta against the wall is never a good way to see if its done. Come to this class for a few classic preparations and one or two twists.
First, we'll start off with making a simple pasta dough with Semolina flour. Then we'll move into making ravioli with a mushroom and cheese filling. Our next pasta dough will be flavored with sundried tomatoes and becomes a rich red/orange hue. If you don't have time to make your own pasta, we'll also discuss dry pasta and the techniques to cook them perfectly.
Moving onto sauces, we'll make a Carbonara with silky smooth yolks and fresh peas spiked with a touch on Guanicale. Our "faux" meatballs will become one of your favorites with sunflower seeds, bread crumbs and garden herbs. During summer when you have a bumper crop of basil, learn the secret to keeping the bright green color throughout the year as you make large quantities of Pesto. Finally we'll make a quick tomato sauce with sweet Italian Sausage that deserves some bread to mop up the plate.
Class begins at 6:30pm and costs $85.
