Butcher Michael Sullivan for an exclusive class on Butchering & Brining!

What happens when you combine a heritage breed pig, a nationally recognized butcher,
and the Founder from Cochon 555, a 20-city US Tour teaching the benefits of whole animal
utilization? You have a recipe for serious entertainment, delicious food and the chance to learn all
about at-home butchering. Cochon 555 has taken the fine-dining chef community by storm with its
friendly culinary competition. During their brief stop in San Francisco, they will stop by to show us
how to breakdown a pig, brine some tasty pig parts, and talk us through brining and butchering at
home. 
This is a class for the at-home pork enthusiast interested in the flavor benefits of heritage
breed pig, brining, and how to use the tools to get the job done. Don’t miss this spectacular seminar
