Brenda Palms Barber is a huge “bee”liever in second chances. After taking charge of the North Lawndale Employment Network (NLEN) in 2000, she searched for a solution to help formerly incarcerated men and women in the Lawndale community overcome significant employment barriers. Surprisingly, she turned to beekeeping. In 2007, Barber launched Sweet Beginnings owned by NLEN, to raise bees and produce beelove urban honey and all natural honey-based body care products. This green, social enterprise offers 90-day transitional jobs to help ex-offenders gain marketable skills and establish a work history. Brenda also was a recipient of the Chicago Magazine 2009 Green Award.
Nancy Tuchman has guided Loyola University Chicago to become one of the greenest universities in the Midwest. She is the Founding Director at Loyola’s new Institute of Environmental Sustainability (IES). Beyond the cutting edge IES green building, she has been preparing the next generation of environmental leaders through a variety of innovative initiatives including a student run program that converts used cooking oil into biodiesel fuel for intercampus shuttle buses; organic food production at urban campuses and an off-site student run farm; reduction of energy usage and waste campus-wide; and environmental science literacy for all students. She has also been a professor of Aquatic Ecology for 25 years. Nancy was also a recipient of the Chicago Magazine’s 2013 Green Award.
Breakfast menu includes:
Mini-bagels, breakfast breads, muffins, scones, danish, cinnamon rolls, and a make your own yogurt parfait bar with yogurt, fruit, and granola. Beverages include coffee, tea, and fruit juice.
Because we need to pre-order food, registrations will not be accepted after June 23rd at noon, and there will be no walk-in registration.
