As part of our ongoing work to bring attention to underutilized species of seafood, we're pleased to announce that the Chefs Collaborative Trash Fish Dinner series is coming to southern New Hampshire.
This event draws on chefs from around the seacoast area of New Hampshire and southern Maine, an area whose fishing communities have been particularly hard hit by catch limit cutbacks in imperiled groundfish like Cod and the recently announced closure of the Gulf of Maine shrimp fishery. The chefs will be preparing a delicious meal from a range species that give both the oceans and the fishermen a break. Historically regarded as "Trash Fish," species that weren't worth pursuing or bringing to market, the chefs will show that these fish are anything but, and that the decision to help save our oceans and our communities can be a delicious one.
