The First Cut - The Perfect Blend: Ground Meats, Great Flavor

Michael Buckley, owner and operator of The Ventura Meat Company, will be our main speaker for The Perfect Blend. He'll give us the inside track on ground meats and their versatility, starting with the common beef and wrapping up with some unique ideas that only the local butcher can supply.
What we'll cover:
Basic grind styles and the different varieties of cuts that can be used.
The characteristics achieved by using certain types of cuts in your grind.
Fat content and why having the right percentage and style will make all the difference.
Stages of the grinding process and what makes each stage important.
For a hands-on component, we're going to get everyone in on the process, using an old fashioned hand grinder to demonstrate what it takes to get that perfect blend. You'll leave with skills that will take your chili to the next level and raise your burgers to a new tier of yum.
Hors d'oeuvres and refreshments will be served.
Every attendee will go home with 1 1/2 pounds of fresh ground beef, a $13-14 value.
