Strawberries and Summer Herbs: Jamming Workshop with INNA jam


Summer is here, which means it's time to make the most of all the delicious fruits and herbs at the farmers market. In this hands-on workshop, we’ll start off by making a classic Seascape strawberry jam using INNA jam maker Dafna Kory's perfected technique. To add a twist, we'll then experiment by adding different fresh summer herbs like thyme and basil to micro-batches of jam. We'll taste each of the different strawberry-herb variations, share our reactions, and discuss how to create unique flavor combinations to different tastes and culinary applications.

Each participant will take home a jar of freshly made jam and a jamming starter kit, including a separate jar, a muslin bag for woody herbs, and pectin. Versed in the fundamentals of jamming, you'll be ready to start designing your own signature flavors and preserving your favorite summer fruits to enjoy year-round.

Location: CUESA Dacor Outdoor Teaching Kitchen at San Francisco's Landmark Ferry Building (South Arcade)

Instructor Bio

As the founder of INNA jam, Dafna crafts single-varietal jams with an emphasis on fresh fruit flavors. As a self-taught jam-maker she encourages home cooks to experiment (and take notes!), to cook jam in hyper-small batches (less commitment!), and to eat jam while it's fresh (we're lucky to have fruit year-round in California, so skip the canning and store your jam in the fridge).


Please note UKSF's cancellation policy: Refunds are available if notice is given 48 hours prior to the event. There are no refunds after that point, but you're welcome to pick up any materials and supplies handed out in class. Please be sure to email registration@urbankitchensf.org *before* class to ensure that your items are held for you. Without advanced notice, we may not be able to save everything. Please make sure to pick it up by the Saturday following the class as materials tend to be perishable.
