The Lasater Ranch Tour (Friday 6/20 9am-3pm)
We will depart from the Auraria Campus and travel to The Lasater Ranch where Dale Lasater, 2002 Slow Food Foundation for Biodiversity award-winning cattle rancher, will host a tour at his magnificent Colorado ranch. Dale will share his knowledge of pasture-based production, holistic ranch management and share insights on what it means to be a multi-generation ranching family. The tour includes a delicious local lunch featuring Dale's meat.

Mile High City Sausage Making and Butchery Tour (Friday 6/20 830am-230pm)
We'll depart from the Auraria Campus and start with a tour of Continental Sausage, 2013 Good Food award-winning Denver sausage maker. Our second stop will be at Western Daughters Butcher Shoppe where we will learn about what it means to be a whole-animal butcher from owners Kate Kavanaugh and Josh Curtiss. Finally, we will stop at a local Whole Foods Market and enjoy a local lunch followed by a tour of their meat department where we will learn about their in-store butchery process, sourcing practices and labeling program.

Supporter ticket: Keynote, Bison Fabrication and Tasting (Friday 6/20 4:00-9:30pm, Auraria Higher Education Center)
We are pleased to announce the keynote speaker for Slow Meat, Allan Savory, a Zimbabwean biologist, farmer, soldier, exile, environmentalist, and winner of the 2003 Banksia International Award and the 2010 Buckminster Fuller Challenge. He is the originator of holistic management. Savory will deliver his keynote address at 5:00 PM on Friday, June 20, 2014. Following the keynote, we will gather for a celebration of delicious food and community that reflect Slow Meat's goal of better meat, less. We will honor Colorado bison with a fabrication artfully presented by local butchers, explore tasting stations featuring food prepared by local and national chefs, and enjoy cocktails, beer, wine and great conversation. We are grateful to the Savory Institute for Allan Savory's availability to kick-off this gathering with his provocative analysis and recommendations for more animals on the land, fewer animals in industrial confinement.
