With Basic Nutrition Science

Come stay with us for a week and learn raw food preparation techniques, tips and kitchen magic. Learn to easily make delicious food that will impress your family and friends. We give individualized consultation and coaching for food that will be best for our students and their families. Our one-week program is limited in size to give individualized direction and will incorporate other lifestyle changes needed to stay healthy. We are professionals that have over eleven years experience educating students in raw food preparation and nutrition science. Choose one of the following sessions.

Are you looking for a way to get started on raw food or are you and your family simply bored with the raw food you are eating? Have you been searching for a comprehensive, affordable class taught by professionals, respected by leaders in the raw food movement? Many of our prior students have requested that we teach this course, including what to serve for holidays, parties, daily meals, feeding children and many other situations. You will learn the following:

 

  • Basic Raw Food Nutrition Science empowering you to take control of your own health.
  • Learn why the raw food diet should be individualized.
  • Menu planning for individual students and their family’s health Issues.
  • Learn ways to introduce raw food into the family’s diet with the most acceptance.
  • Learn principles and skills to make any raw food dish with time saving ideas.
  • Learn the principles to make delicious nut milks, fermented foods, sprouting, cheeses, breads, chips, wraps, delicious deserts, salad dressings, marinated salads, nutmeats, juicing and many more delicious raw foods with a focus on shelf life.
  • Learn why some ingredients used by raw food chefs are not raw or healthy and what substitutes can be used.
  • Making delicious substitutes for foods you think you cannot give up. 
  • Learn how to use kitchen tools efficiently with hands-on experience; what are the best tools, and inexpensive substitutes.
  • Learn how to spend a half-day making food for the entire week.
  • Learn how to entertain with ease using recipes that can be prepared ahead.
  • Learn how to convert some of your cooked recipes into raw recipes.
  • Learn how to shop, make a list, determine food ripeness, store and prevent food loss.

Cost for the one-week course including accommodations, manuals, recipes, and all food is $1200 per person. Compare our course with other weeklong classes. Our classes are small and individualized. We do not use volunteers or other students to teach, with all classes being taught by Jackie and Gideon Graff.  Register soon as space is limited. Payment plans or financing is available. The Graff Academy of Raw Food Education 3-Week Raw Food Chef Training is a slam-dunk Grade A+ experience for any individual looking to advance their knowledge and expertise in the world of Raw Food meal preparation. From the individualized

attention given by both Gideon and Jackie Graff to each student to the relative inexpensive tuition for the hours spent making food, there is no better raw food training experience out there. I came to The Graff Academy of Raw Food Education looking to understand what the world of raw food was all about. Jackie Graff, Co-Founder (1945-2015)

The Graff Raw Food Academy has bid farewell to our beloved co-founder Jackie Graff, RN, one of the country’s top raw food chefs and nutrition consultants, who passed away from cancer on December 7, 2015. In her 15 years as a raw food chef, nutrition science expert and author, Jackie built a national reputation for her raw food lifestyle classes.

Jackie’ spirit and creativity live on in our Academy.  Her energy, knowledge and unique approach to raw food remain a focal point of the Academy’s courses and her example will continue to inspire our many Academy graduates, who have taken her teachings to their own communities and raw food businesses. It is our mission to honor Jackie’s lifelong passion to educate and inspire the community, and her philosophy remains at the heart of this raw food learning center. 

About Us

Gideon Graff, Co-Founder, Academy Director

Gideon Graff, a native of Israel, brings 35 years in food and hospitality management to the Graff Academy as well as 15 years as a raw food chef and health coach.  

As director of the Graff Academy, Gideon oversees the Academy’s learning curriculum and business and marketing strategy that has graduated hundreds of students.  He brings significant knowledge of raw food nutrition and expertise in managing raw food businesses, including wholesale, retail and catering.  He now applies that expertise to Graff Academy’s U.S. and international students,  many of whom go on to establish their own raw food enterprises around the world.   

Gideon previously served as an instructor for Hallelujah Acres® Culinary Academy. He also was co-founder of the country’s first raw food café and learning center, the Sprout Café and Shinui Living Food Learning Center in North Atlanta.
