Peru. A product of 500 years of fusion of Chinese, Japanese, African, Spanish and Inca
cultures, Peruvian cuisine is filled with rich flavors, aromas, and stories. Interesting eh?
Yes, these will be the dishes we prepare. It goes beyond simple—without having to be
super elaborate. It’s just a matter of smart seasoning and a touch from the heart and
soul! To make this experience “happier,” we will prepare and taste regional dishes with
distinctive sauces, starters, entrees and dessert to enrich and “kick up” your traditional
kitchen. You will learn to incorporate the spark of Peruvian Latin cuisine, filled with
flavor and originality, into your everyday meals.
I will show you how to create the following classic dishes from Peru:
¸ Tequeños de queso con salsa de Rocoto – Crispy fried wanton pockets stuffed
with cheese and accompanied by a Rocoto Pepper dip
¸ Seco de Res – Slow cooked Beef shortribs Cilantro Stew with fresh peas
¸ Frejoles Peruanos – Canary Peruvian beans seasoned with bacon and peppers
¸ Arroz Amarillo – A creative style turmeric Yellow rice
¸ Crema volteada – Baked crème caramel
