Two years after John announced on our honeymoon that he wanted to quit his job and "do something in cheese," we unlocked the front door to our very own cheese shop on February 11, 2010. We've been asked many times since, "Why a Cheese Shop?" and the answer is simple. After putting ourselves through cheese bootcamps, running a cheese club out of our house, attending cheese conferences, interning for French affineur Herve Mons, journeying through Europe, and eating our way through thousands of tasty cheese morsels, we honed in on our true passions: eating, talking, traveling, and spending time together. Over a bottle of wine one evening, we realized that working behind a cheese case would bring them all together.

Our "One-of-a-Kind" series delves deep into a particular group of cheeses, allowing you to taste the nuances within the category. In this class we are excited to feature blues from all stops on the intensity spectrum: from mild and creamy to spicy and crystalline, both pastuerized and raw. Blues cover such range, and we will explore examples from all of the world and of all different flavor profiles. This class isn't only for blue cheese lovers; we guarantee you'll find new favorites and learn the scientific secrets behind this fascinating category, as well as perhaps find your new favorite cheese! As always, the tasting will be accompanied by olives, nuts, and Easy Tiger bread. We'll also bring out a number of additional pairings like chutneys and charcuterie bites, depending on that evening's cheese selection. Note: Doors open at 6:15pm and the event starts at 6:30pm. You may choose to arrive early and separately purchase our wine or beer pairings from the Cheese Shop prior to the class the day of the event. Should you choose to bring your own wine or beer, there is a $4 set-up fee. As the tasting wraps up around 8pm, we'll give you and your guests time to mingle and enjoy the Cheese House, while we cut-to-order any cheese from the class that you'd like to purchase so you can re-create the tasting at home. A couple RSVP reminders: Each class is $39.99 processing fees. Once you click to purchase tickets, you will only have 5 minutes to complete your order. To pay with a gift card, click "show other payment options" under the "Order Now" icon (and we will contact you later to get the gift card number). Once purchased, tickets are non-refundable and non-transferable to other dates. You will receive a confirmation email which you should bring along with you on class night. We allow individuals to purchase up to 4 seats; please note we can only guarantee seating for parties of 4 or less. (If your party is larger, contact us for information on private parties and tastings!) If you're unable to purchase one or more tickets, that means they are sold out. Please sign up for our waitlist (once per person); we are often able to accommodate guests off this list. Lastly, remember that you can come into the Cheese Shop anytime and taste cheese for free. Our cheesemongers are here to guide you through the case and answer any questions.
