Meet the Cheesemaker, Franklin Peluso, maker of Franklin's Rice Flour Teleme and Washed Rind Teleme cheeses! He is a third generation cheesemaker continuing the family tradition of making Teleme by hand--the process of using his hands to squeeze and press mounds of curds to get the ideal texture and moisture content of each batch of cheese. While the cheese is young it has a semi-soft texture with a slight tangy flavor, but as it ages it develops a more complex flavor and creamier texture. Teleme cheese is only made in California and defines the true meaning of artisanal cheese: handmade, local and original!
