Come get to know Chef de Cuisine at Oleana, Cara Chicazola-Tobin, as she warms you up with some Mediterranean comfort foods. Cara’s first dish, Koshary (Rice, Lentils & Pasta), is recognized as one of Egypt’s most popular street foods, and is served off street vendor carts. Moroccan Harira is a chickpea and tomato-based soup, which is a great and easy fall dish. Chicken Shwarma is beloved across the Middle East, wrapped in pita or flatbread, it is great on-the-go; and is a perennial customer favorite at Oleana and Sofra.Street food is one of the centerpieces of culinary tourism for people in pursuit of unique and memorable eating and drinking experiences. Throughout the Mediterranean, eating on the street is a way of life. This course offers home cooks the chance to experience the tastes of distant lands without leaving the kitchen.
