We monitor our beers closely and extract samples throughout the fermentation process that ensures that the product is at its highest quality when the time comes to bottle or keg the beer. In the past week we have watched closely as our fermentation was a affected by what we call "lazy yeast." The yeast (which actually ferments the beer) took more time than usual to become activated and begin the fermentation process.
We are so proud of our beers that we did not want to jeopardize their flavor characteristics by pouring beers that we did not believe were at their peak.
Founded in 2010, Laetare Brewing Company is the brainchild of Brian Donohoe and Casey Cavanagh. Laetare boasts hand-crafted beers drawing from traditional recipes with a new-age flair.
After beginning their careers in DC, the two have continued to brew and strengthen the vision of their brewing company.

With your purchase of a ticket, you will have an opportunity to sample two of Laetare's best brews:
- "The Saint Patrick:" An authentic Irish ale brewed to have tasting notes of chocolate, roasted grain, and a noticable hop character. It is 7.3 % ABV and is Laetare's flagship beer.
- "The Man in Black:" An India Pale Ale that will please even the biggest hop-head. This beer has citrus characterists with a well-balanced malt foundation. It is 9.5% ABV and cures your hop addiction.
