Event Details

One tamale, two tamales, three tamales, four! That's how many different kinds of tamales you will learn to make during our signature tamale making class. Join the city’s best tamale makers as they work their masa magic, and then take your tamales home for your holiday parties.

Taught by Alicia Villanueva of Alicia Tamales Los Mayas (Mexico), Constanza Ortiz of Maite Catering (Colombia), and Maria del Carmen Flores of Estrellita’s Snacks (El Salvador).  

Learn the secrets behind these national varieties, from the sweet-corn, banana-leaf wrapped Mexican variety, to the soft, wet, bright yellow dough of Colombian tamales, to the Salvadorean maize version.  Fresh out of the steamer with a tender corn husk or plantain bow, tamales are soft and ready to eat!  La Tamalada ends with a big feast, the remains of which will keep the tables stocked for the holidays.  Like so many traditional foods, los tamales represent so much more than just a tasty bite - it's community.

La Cocina is a ground-breaking business incubator designed to reduce the obstacles that often prevent low-income food entrepreneurs from creating successful and sustainable small businesses. By providing affordable, shared, commercial kitchen space, an array of industry-specific technical assistance and services, and access to market opportunities and access to capita, La Cocina works with entrepreneurs as they launch, grow, and formalize successful food businesses. We focus primarily on women from culturally diverse communities and immigrant communities. Our vision is that our program participants will become economically self-sufficient and contribute to a vibrant and diverse economy doing what they love to do.

La Cocina es una incubadora de negocios creada para reducir los obstáculos que suelen prevenir a los empresarios de crear pequeñas compañías exitosas y sostenibles. Al proveer recursos compartidos y un gamo de servicios específicos a la industria, las incubadoras de negocios aseguran que los pequeños negocios puedan ser exitosos. La misión de La Cocina es cultivar a los empresarios mientras que formalizan y crecen sus negocios de comida dando espacio a bajo costo en una cocina comercial, asistencia técnica específica a la industria y acceso a oportunidades para vender.
