Don’t want to turn on the stove? Looking for something you can make ahead and keep in the fridge for several days? Hearty Summer Salads are the answer! Turn salads into a meal by combining gorgeous vegetables with hearty grains, beans, nuts and seeds. Join Ruth and Kari as they demonstrate and sample three hearty salads bursting with vibrant colors, flavors, and nutrients. Sample the “Emerald City Salad”, with a rainbow of vegetables and nutty wild rice; the “Quinoa, Almond, and Curried Chicken Salad”; and a “Greek Salad with Chickpeas & Feta” tossed in a light vinaigrette.
