Through dissection of the history, ingredients, varieties and usages the following definition can be formulated: Aromatic Bitters are a potent, concentrated potion of fruits, roots, herbs, spices, and botanicals accented by bitter notes. A couple of dashes added to a cocktail enhance dimension, depth and provide bittersweet contrast to the accompanying liquors, fruits or other sweeteners. SUN, FEB 17, 3-6PM: Pow Wow Pork & Tiki
SIGNATURE EVENT: FREE EVENT! Imagine having a drink on Gilligan’s Island with pig roasted on a spit over an open fire. However, instead of the tacky tourist bar drinks full of high fructose corn syrup, think of a refreshing complex concoction. PACIFIC SESSIONS: The Japanese bartend in the way of the samurai. Similarly, it’s like watching chanoyu or tea ceremony. Precision and purpose is the key to ever every shake and pour. PACIFIC SESSIONS: To anyone who has wondered what Tiki is, why anyone cares about it, or why it is relevant to the cocktail scene, this is a must attend event. Led by innovative tiki mixologist Suzanne Long, "On Punch" is more than providing a recipe.  Participants will trace the history and varieties punches from the communal punches and colonial strained Milk Punches of Benjamin Franklin to the punches made by the gentlewoman housewives of colonial Williamsburg.  And from the exotic and mysteriously spicy potent potables on the swabbed decks of the British Royal Navy, to the flaming midcentury scorpion bowls of decadent Polynesian daydreams.    There will also be assistance in understanding how to utilize punch as the perfect "welcome cocktail" or opening drink for both home parties and professional service settings. Open to both industry and cocktail enthusiasts, we are bringing together talents from around the U.S., Japan, Australia, and beyond for a full week of tastings, pairings, workshops and more! Pairing Dinners between drink and food are an occasion where the whole is greater than the sum of its parts. Similar to a great sauce, having a drink that pairs with food can accentuat and enhance flavors in food. The most popular pairing is between wine and food. Beer and food has risen in popularity as of late. The usage of both wine, beer and the addition of spriits, is the next logical step, hence, cocktail pairings. In the world of craft cocktails where all consumable ingredients are "fair game", the possibilities in taste are limitless. Through Hawaii Cocktail Week's Pairing Dinner series, foodies unfamiliar with the cocktail pairing concept will expand their palates and understanding of taste as some of Hawaii's top chefs collaborate with the countries top bartenders.
