Treat yourself or a friend to three hours of hands-on expert instruction from one of Chicago's master butchers from Buedel Fine Meats & Provisions, along with cooking demonstrations and tastings from acclaimed Chicago Chef, Ryan Hutmacher.
Learn how to break down a naturally pastured heritage hog carcass from Chicago's own Slagel Family Farm. You'll learn carving techniques, knife skills, preparation and sustainable whole animal practices from Buedels Master Butcher, Tim Vlcek. Then, watch Chef Ryan prepare several dishes that honor the purity of this fresh, local product in his clean-comfort style.
