"Sustainable seafood prepared in a wood-burning oven"
Adjacent to the new restaurant, Fry opened Oyster Bar at The Optimist, a more casual "fish camp" style venue, featuring an outdoor patio, live music and an oyster bar. Both the oyster bar and restaurant feature Smith Hanes’ designs and architecture by Tim Nichols.
A message from Chef Adam on their Sustainable MSC Certified Sourcing!
"One of our primary sourcing practices at The Optimist is only to buy fish through purveyors that are MSC certified. The MSC’s mission is to use its ecolabel and fishery certification program to contribute to the health of the world’s oceans by recognizing and rewarding sustainable fishing practices, influencing the choices people make when buying seafood, and working with partners to transform the seafood market to a sustainable industry. MSC certified fisheries are harvesting fish using sustainable practices and fishing at a sustainable rate (avoiding overfishing) and their methods of catch are environmentally sound. Fisheries that are certified are seeing tax breaks, federal grants and rewarded for sustainable practices.
It is important to us at The Optimist to buy fish from purveyors that we trust and also buyers that run their business with sustainable fishing in mind. We are making every effort as a restaurant to become MSC certified so that we have a certification that communicates to our guests that we serve 100% sustainable seafood."
