  • Review the fundamental properties of water for a deeper grasp of moisture issues.

Session 1: Fundamental Principles of Water
A review of properties of water (heat capacity, heats of phase transition, thermal conductivity, binding properties) that make it uniquely important. Sets the stage to discuss interactions that affect water's energy level (water activity).
 
Session 2: Measuring Complete Moisture
Overview of best practices, tricks, and pitfalls. How to translate an R & D specification into a QC program that gets the best results. Ways to collect and evaluate water activity, moisture content, and moisture sorption isotherm data.
 
Session 3: Modeling Water Activity
Hands on modeling practicum for microbial growth, chemical interactions, shelf life, temperature abuse and more. Includes Arrhenius equation, Q10 and QA approaches and methods for controlling water activity.
 
Session 4: Formulating with Moisture Sorption Isotherms
Practicum on using isotherms to set specifications and address issues such as moisture migration, texture preferences, dissolution rates, coating integrity, powder flow properties. Learn to create mixing models, determine phase transitions, calculate packaging requirements and more.

Brady Carter has been a Research Scientist at Decagon since 2004.  Prior to that, he was a Research Professor at Washington State University in the area of Wheat Quality and Chemistry.  He received a Bachelor's degree in botany from Weber State University in 1997 and a Masters degree from Washington State University in Crop Science in 1999.  His research at Decagon is focused on applications for moisture analysis and the development of new moisture analysis equipment in foods, pharmaceuticals, and other manufactured products.Brady Carter
