The food that inspired cooking academia, defined technique, and bred names like Escoffier, who practically invented the kitchen brigade system ubiquitous to fine dining restaurants today! In many chefs eyes this was the era when cooking was born, it is these fundamentals we look back on for inspiration, to create brand new ideas today.
