Food for Life: Cancer Project

The Power of Food for Cancer Prevention and Survival

Instructor : Jennie Steinhagen

EAP Partner : Mera Samaroo

The news:
Reviews by the American Institute for Cancer Research show that as much as 40% of cancer risk may be related to diet.

The GOOD news:  Numerous studies have shown that a diet built from plant foods offers the most cancer-fighting protection of any diet plan!

Food for Life is an award-winning Physicians Committee for Responsible Medicine (PCRM) program designed by physicians, nurses, and registered dietitians that focuses on the lifesaving effects of healthful eating.

The Food for Life: Cancer Project classes offer a unique opportunity to:

  • Acquire knowledge about the link between diet and cancer
  • Experience the benefits of plant-based nutrition
  • Learn the practical cooking skills needed to help you on your journey to better health!!

In the classes, attendees do all of this while enjoying a cooking demonstration and tasting delicious, healthful dishes in a supportive group setting.

Class 1: Intro to How Foods Fight Cancer; Wednesday, Feb 12th 2014 from 7:00 PM - 9:00 PM

In this class, you will learn about the right food choices that not only help reduce the risk of developing cancer but also help to overcome the disease after it has been diagnosed. Learn how to cook three tasty vegetarian dishes and sample them with your new friends in the class. Take home the recipes and try them at home!

Class 2: Fueling Up on Low-Fat, High-Fiber Foods; Wednesday, Feb 19th 2014 from 7:00 PM - 9:00 PM

Did you know that fiber is only found in plant foods? Fiber helps your body rid itself of toxins. It is
especially important in helping the immune system function properly and also facilitates the
removal of waste from the body. Without fiber in the diet, these excess compounds are often
reabsorbed into the bloodstream, leading to a possible increased risk of cancer. Learn how to prepare delicious, low-fat dishes made from whole grains, legumes, vegetables and fruits...and of course three new recipes to taste!

Class 3: Discovering Dairy and Meat Alternatives; Wednesday, Feb 26th 2014 from 7:00 PM - 9:00 PM

When cancer researchers started to search for links between diet and cancer, one of the most
noticeable findings was that people who avoided meat and dairy products were much less likely to
develop the disease. Consuming dairy causes worrisome biological changes in the body, including an increase in the amount of insulin-like growth factor 1 (IGF-1) in the bloodstream. Scientific studies have shown elevated IGF-1 levels to be a catalyst for the growth of breast and prostate cancer cells. Meat is another food that may be linked to cancer and other illnesses. This class allows you to explore a variety of vegetarian sources of protein, all of which are low in fat, high in fiber and loaded with cancer-fighting nutrients. Try out samples in class...and find them everywhere in LI !

Class 4: Cancer-Fighting Compounds and Healthy Weight Control; Wednesday, Mar 5th 2014 from 7:00 PM - 9:00 PM

Both antioxidants and the body’s immune system are critically important in fighting cancer. Cancer-
fighting compounds, such as antioxidants, mainly found in fruits and vegetables, assist in halting
free radical damage, which can otherwise lead to cancer development. Healthy weight control is
also essential for warding off a variety of chronic diseases. Healthy dishes loaded with
immune-boosting nutrients such as beta-carotene, lycopene, vitamin C, and zinc are
demonstrated—helping you learn and discover how to easily and naturally maintain a healthy
weight and a cancer-fighting nutritional regimen!
