The future of food: Disruptive food innovations in the 6e cycle of Kondratieff Technology has pushed the food industry since the beginning of the agricultural area roughly 12.000 years ago, from a society of hunter-gatherers (200.000-12.000 years ago) to farmer’s societies until 100 years ago. Since the industrial area 200 years ago started, disruptive technologies like pasteurization, sterilization (both only 150-100 year old) and chilling and freezing (roughly 50-70 years ago transformed the way we produced food, sell and consume foods tremendously. Preservation technologies made it possible to store foods for a longer period and the mechanization and modern transportation system has resulted in a worldwide food-network operated by multi-billion companies. The highly efficient system resulted in low cost foods and created the possibility to use our income on own home’s, cars, computers smartphones and holidays. It also resulted in large health problems in most western countries. We started to overeat with carbs and sugary –highly tasting- products. Meanwhile we foresee future problems in the supply of proteins worldwide and lots of food is wasted especially fresh fruits and vegetables. Novel food technologies –some of them disruptive- are arising and will change again our food systems. Die or innovative is the adagium nowadays for all companies large and small. This keynote given by Wouter de Heij from Wageningen, The Netherlands will place preservation technologies in historical perspective and provide an outline of future in food illustrated by examples. Disruptive technologies again will change our societies. Will global solutions been solved? Will we become healthier by consuming better quality foods?
