When & Where
Kimchi is naturally preserved raw vegetables in puree of spice, fruit, garlic and ginger.
Ellen's Kimchi is handmade with local organic produce and it comes to you already fermented. Keep refrigerated and eat slowly as a side dish with meals or as an ingredient for any cuisine. Ellen's Kimchi tastes the best when it's been stored in fridge for 3 weeks or longer. Kimchi develops new flavor everyday as fermentation progresses, just like wine and cheese. Along with vitamins, minerals, iron and other essential nutrients in raw vegetables, fermentation creates Vitamin B12 and K, probiotics and lactic acid and other nutrients that help our immune system, digestion and cleanse. It's a living food and zero waste because Kimchi does not expire. Fermentation is the ancient method to preserve fresh produce by creating new food like Kimchi. Drink all the bubbly fizzy Kimchi juice like soda, it's concentrated with delightful flavors and nutrients, it's Kimbuchi!
Ellen's Kimchi is available for purchase through goodeggs.com/ellenskimchi or at Other Avenues Coop, an employee owned grocery stores specializes in local organic vegan products. Ellen also offers Make Your Own Kimchi Kits and Classes.
