Cava is a generic term for any Spanish sparkling wine, and some of them are older than even the oldest Champagne houses in France. Prosecco is the Italian alternative, and the planet seems to be thirsty for as much of it as northern Italy can produce. Franciacorta is another class of Italian sparkler, but there's only a tiny bit of it imported into the US.
