Join the team at Jasper Hill for a once in a lifetime opportunity to taste Comte with visiting expert, Philippe Goux. Philippe has dedicated his career to what is considered France's most dynamic cheese, representing the famed Fort Saint Antoine aging caves in the Jura. On his last visit to the Northeast Kingdom, Philippe fell for our amazing local beers. We decided that for his next visit we would bring our friends together to taste 'vertically' through different batches of Comte and Clothbound, geek out on the subtle variations, find the most excellent hard-to-get beer pairings, and enjoy a fabulous spread of fermented delights. The most compelling reason to pull off such an epic pairing is to honor our friend, Daphne Zepos, and her vision for the future of American artisan cheese. Before her passing in 2012, Daphne created a scholarship that provides opportunties for young people to travel the world in order to learn about cheese with the goal of educating others upon their return. We are celebrating Daphne's passion for great cheese and her amazing ability to help people embrace the importance of the work that we are committed to. All proceeds from ticket sales will be donated directly to the Daphne Zepos Teaching Award endowment.
When & Where
The Cellars at Jasper Hill is dedicated to the highest level of professionalism, when it comes to aging and developing new artisan cheeses. This work includes hours a week of dedicated tasting and sensory analysis in order to understand each batch's quality and market potential. Events like this are a fun way to expand our horizons as an community of people who love cheese and farming. Having a world-renowned Comte expert in our midst was something that we just had to share!
