When & Where
Dining with Darling
Chef Darling unofficially began his culinary apprenticeship at age 15 in his family’s home kitchen. Inspired by his parents, both descendants of French speaking families, they equally shared a passion for discovering and cooking international cuisines blended with handed down family recipes.
In 1980, after cooking in various restaurants while attending college, Keith created a path to New Orleans for a seven-year stay, entering the world of professional cooking via the American Culinary Federation Professional Chef Apprenticeship Program. He completed his three-year training in 1984 grounded in the foundation of classic and modern French cuisine including studies in a variety of global and emerging ethnic cuisines.
In 1987 Keith entered the world of culinary research and development as Corporate Executive Chef for a variety of recognized food companies developing foods and recipes that reached millions of people in restaurants, colleges, and contract food companies nationwide.
In Keith’s spare time he developed and taught his own cooking class series “Think Like a Chef” with emphasis placed on, as he describes it, “unlocking the language of the recipe,” to over 1000 budding culinary enthusiasts over a ten-year period.
Chef Darling loves to cook and to teach people about food! His enthusiam for his work is contagious, his teaching very interactive and enagaing and the food you make in the class is divine!
