Event Details

This year, Executive Chef Lon & Chef Jeff joined award winning cookbook author, Chef Robert Danhi, and top South East Asian food blogger, Bee Yinn Low, on a journey to Vietnam, with Red Boat fish sauce founder Cuong Pham.


Their travels carried them to the waters off the Phu Quoc islands, where Red Boat harvests black anchovies to produce its "extra virgin" fish sauce. The group also engaged with locals at countless street markets, all the while experiencing the distinctive flavors of the region. 
 

Join us at ChoLon on August 22nd as we recreate and enjoy a taste of their travels! 



The restaurant will transform to a Southeast Asian food court, where stalls are filled with the foods and libations the group experienced abroad. The team will illustrate their culinary travels with tantalizing dishes, and share brilliant photography and video capturing their adventure.

Founded in 2010 by Lon Symensma, Jim Deters, and Alicia Deters the Denver-based company delivers chef-driven restaurants to the Colorado market. Flow Restaurant Group restaurants share common cornerstones: seasonal menus that celebrate local farms and purveyors; artisanal wines; craft beer; handcrafted cocktails; striking interiors and sustainable business practices. Flow Restaurant Group takes its name from the Hungarian philosopher, Mihaly Csikszentmihalyi, best known as the architect of the notion of “flow”, the mental state of operation in which a person in an activity is fully immersed in a feeling of energized focus, full involvement, and success in the process of the activity.

ChoLon, which translates to "big market”, is named after the largest Chinese-influenced market in Saigon, Vietnam. Chef Lon Symensma brings to life his extensive culinary travels throughout South East Asia, in his Denver restaurant, with a menu featuring inspired interpretations of traditional dishes found across the continenent. Presentations are ideal for sharing. From dim sum or "small bites" to large family style plates, authentic flavors get a unique twist to please modern tastes. The bar and lounge serves handcrafted, artisanal cocktails developed to enhance Symensma’s creations. The venue is also ideal for business meetings and presentations and features a large projection screen in the lounge area. In addition to lunch and dinner service, ChoLon offers an all day menu which may be enjoyed in the lounge.

 

Gather is a contemporary café and lounge, located in the historic Rocky Mountain Bank Note building at 1062 Delaware Street.

 

Gather is situated under the same roof as Galvanize, a digital startup hub, and embraces similar ideals of its proprietor. Gather is a place for connecting minds and convening with peers, over an exceptional weekday meal or snack; business breakfast, luncheon, reception, or casual hangout on any Saturday. The bar area is spacious and boasts large screen TVs with a variety of comfortable seating options. Gather’s soaring ceilings and exposed brick, create a sleek and hip atmosphere.  

 

Breakfastlunch, and happy hour is served Monday – Friday, from 8am – 9pm, and Gather is open on Saturdays from 8am-5pm.  Chef Lon Symensma has crafted the menu to include a selection of homemade scones, muffins, and pastries. Fresh bagels are baked in- house, daily, by Josh Pollack, working out of the Gather kitchen until his own Denver-area brick and mortar location, “Rosenberg’s Bagel and Delicatessen,” opens in 2013. Gather will be its first wholesale partner. From lunchtime to 3pm, expect a selection of hearty salads, sandwiches, soups and snacks. Specialty bar snacks will be featured during afternoon hours until close. 

 

And yes, there is amazing coffee; in fact, some of the best single origin beans masterfully prepared at Gather’s slow bar produces coffee by distinguished cultivators, Ninety Plus.
