C.H.E.F.S., the Coalition for Humane and Ethical Farming Standards, along with Los Angeles’ leading
restaurants, Animal, Melisse and The Royce at The Langham, will simultaneously host a six-course
prix fixe dinner to support sustainable farming practices and the battle for foie gras. The evening at
The Royce will feature the following menu and esteemed chefs:
Foie Gras and Cherry Blossom Parfait, Barley, Sea Beans and Shiso
Artisan Foie Gras Torchon and Bigeye Tuna with Mustard Fruit and Saba
Foie Gras Custard, Spring Vegetables, Smoked Sturgeon, Rye
Foie Gras Sauté with Grilled and Partial Dehydrated Strawberries
Pan Roasted Duck Breast with Forbidden Rice and Foie Gras “Risotto,"
Pickled Ramps, Duck Confit, Cherry Jus
Dry-aged Beef "Boullion," Foir Gras Fondue, Tarragon Printed Pasta, Crimini Mushroom
All reservations must be guaranteed by credit card. Cost per person is $200, broken down as follows: $100 to cover the cost of the dinner, tax and service charge; and a $100 minimum suggested contribution to C.H.E.F.S., the Coalition for Humane and Ethical Farming Standards.
