In celebration of Santa Cruz Beer Week, Executive Chef Carlo Espinas prepares a family style meal inspired by the traditions of Southern cooking and infused with the fresh local ingredients of Santa Cruz County. Carefully selected beer pairings from Discretion Brewing and other Assembly favorites accompany each course of the meal.
Start out snacking on an assortment of pickles, homemade crackers with pimento cheese, El Salchichero pork rinds and beef jerky & corn fritters. Put away classic three bean salad with marinated peppers, cherry tomatoes and avocado ranch. Tuck in to Blackened halibut with homemade andouille sausage, roasted eggplant & crispy grit cakes. Pass platters heaped with biscuits drowned in smoked tomato gravy, heirloom tomatoes, cowboy beans and braised greens or Smothered Pork Shoulder with mashed potatoes and summertime corn relish. Pasty Chef Anna St. John closes the meal on a sweet note with Chocolate rice pudding with figs, sweet corn and caramelized rice crispies.
