Here’s the back story:
The entire back half of the building was structurally unsound and had to be torn down. The smoke was so intense, it warranted everything on the interior of the building be removed, including all wood, floors, and ceilings. We realized we were given an incredible opportunity to not only build a beautiful restaurant, but also to be “green” and locally responsible with our money.
In our quest to become Indiana’s “greenest” restaurant, it was decided to use as much recycled wood as possible. The floor in the bar is polished concrete with 2,000 lbs (one ton) of recycled and crushed beer and wine bottles embedded in it. Artifacts, stained glass and paintings that could be saved were professionally—and locally—repaired and cleaned.
Most of our new equipment is “Energy Star” rated. We installed solar panels to help heat our water. We continue to recycle our plastic, paper, glass bottles and cardboard. Also, we are collecting rain water for our garden. Future plans include a roof-top garden in to provide us with organic vegetables and herbs.
It became our goal to use as many local companies as possible for the rebuild. We wanted to spend our money on neighborhood vendors to aid our community. Obviously, if we pump revenue into our own neighborhood, we all benefit. The monthly gatherings attract professionals, students, activists and interested individuals.
