Iranians are famous for their hospitality, and guests in a Persian home are greeted with an array of fragrant and colorful homemade dishes. We welcome you into our kitchen for this Persian cooking class with Chef Geoff Lukas and Louisa Shafia, author of "The New Persian Kitchen," who will share a mix of authentic street foods and classic family favorites that they tasted on their respective trips to Iran. Recipes include: Sambuseh, crispy filo triangles stuffed with ground meat and vegetables and served with a spicy relish; Tahchin, a rice pie baked golden-brown and filled with chicken and tangy barberries; Gondy, otherwise known as Persian ‘matzo balls’ made from ground chicken and chickpeas and seasoned with cardamom and turmeric; and Khoresh Sabzi, a delicate stew of green herbs, sour tamarind, and fried onions. Participants will receive a copy of Shafia’s cookbook “The New Persian Kitchen,” to take home.
All Fall Cooking Classes at Sofra Bakery include multiple recipe demonstrations and full tastings of all prepared dishes, with wine pairings.
