A Mosaic of Flavor: Middle Eastern Makloba with Goat Meat

When Nagham Nasser was an English teacher in Syria she would cook classic Middle Eastern dishes for international guests. She often prepared Makloba (literally translated means “flip upside down”), which is a goat meat dish prepared with eggplant, tomato, potato, onion and rice and seasoned with garlic, cinnamon and green ginger with a touch of yogurt. This is a meal served at special family gatherings throughout the Middle East. A Mosaic of Flavor is a collaboration with the Vermont Refugee Resettlement Program. This series highlights flavorful food from other cultures and how it unites families and friends.
