Cheese Making Workshop

The Monadnock Localvores will host an Cheese Making Workshop with Noel Aderer  on Wednesday, June 12, 2012 from 9:30am to 12:30pm in Dublin, NH.

At our hands-on Beginner Soft Cheesemaking Class, you will learn to make plain and seasoned chevre or fromage blanc, lemon cheese, a simple ricotta, yogurt cheese (labneh), and mozzarella, all of which can be easily replicated in your own home kitchen with simple supplies you may already have! After you taste your first batch of fresh cheese, you’ll never feel the same way about store-bought.

Learn what type of equipment you will need, the best ingredients to use and where to buy them, and how to safely make, season and store your own artisan cheese.
 
We try to use both goat and cow’s milk to make our cheeses but sometimes goat's milk is not available. Classes run approximately 3 hours. 

This indoor workshop will be held rain or shine.  Please, no sandals.

"I started making cheese about 10 years ago, when I found myself surrounded by 100 acres of prime agricultural soil, in both pasture and hay, and 6 very sweet and very productive dairy cows. I had a lot of milk to experiment with! I made plenty of mistakes (still do!) but thankfully nothing went to waste as the hogs, chickens and the compost piles enjoyed my efforts. Just as I had finally perfected a few cheeses, after much trial and error, life threw a curve ball and I found myself starting over, this time with goats instead of cows. The chevre was delightfully fun and delicious, but I just didn't have enough land to start a full fledged dairy back up again. It was then I realized that perhaps, instead of making cheese and selling cheese, I could teach other people how to make their own cheeses.

"I thoroughly enjoy teaching people how to make their own soft cheeses. It's a great feeling to know you can make a delcious cheese, usually easily and inexpensively. These cheeses taste better, and there are "real" ingredients (that you can pronounce!) in the food you offer family and friends, no fillers or soy or artificial chemical stabilizers needed! And you just can't get fresher cheese!

Registration for this workshop is limited.  The sliding scale fee is $5-15; but no one will be turned away due to lack of funds. Workshop fees support Monadnock Localvore education and scholarship programs.
